James's Salsa Picante Cruda
3 to 4 ripe tomatoes
1/2 onion quartered
1 large clove garlic chopped
6 Serrano peppers
2 tbs apple cider vinegar
12 sprigs cilantro
salt
Place garlic, peppers and onions in food processor chop finely.
Add tomatoes, cilantro, vinegar and turn off and on until
coarsely chopped.
Salsa Cruda# 2:
1 cup peeled, seeded and chopped tomato
1/2 cup chopped onion
1/4 cup no salt added tomato juice
2 tablespoons chopped fresh cilantro
1/8 teaspoon salt
1 small jalapeno pepper, seeded and minced.
Salsa #3
1 medium tomato, finely chopped
1/2 medium white onion, finely chopped
6 sprigs fresh cilantro, finely chopped
3 serrano or other fresh hot green chiles, finely chopped
1/2 teaspoon salt, or to taste
1/3 to 1/2 cup fresh tomato juice
