Black Eye Bean Dip

1 stick butter or margarine, (4oz)
1/2 medium onion, chopped
2 5-oz jars sharp pasteurized processed cheese OR 8 ounces sharp cheddar
2 15-oz cans black-eyed peas, drained
2 jalapeno pepper diced
1 4-oz can chopped green chilies (or 2 small fresh)
1/2 teaspoon garlic powder
In a medium saucepan, melt the butter or margarine. Add the onion and saute
until golden brown. Turn heat to low, add the cheese, and stir until melted. Add
the black-eyed peas, jalapeno, green chilies, and garlic salt. Cook for 5
minutes, stirring constantly. Serve hot
Barbados
