Chili
Rellenos
4 eggs
3/4 teaspoon baking powder
4 tablespoons flour
1/4 teaspoon salt
12 large, peeled, whole fresh green chiles with stems
1 lb. longhorn cheese, cut into strips
oil for frying
Tex Mex Sauce
Beat eggs until foamy; add baking powder, flour, and salt. Set
batter aside. Slit each chili open lengthwise below stem and insert
cheese.
Dip stuffed chiles in batter and fry in oil until golden brown Dry
on paper towel.
Optional: For heavier batter, add 1/4 cup yellow cornmeal
Do not look back in anger or forward in fear, but around in
awareness.
