James's Crab Stuffed Avocado
FOR THE FILLING
100 gm Lemon, garlic and herb dip (3 1/2oz)
250 gm White crab meat, flaked (8oz)
3 x Spring onions, finely chopped
1 tbl Fresh parsley, finely chopped
Salt and freshly ground black pepper
FOR THE AVOCADO BASE
2 x Ripe avocado pears
1 tbl Lemon juice, for brushing
1 tsp Paprika
Method :
Place the dip in a bowl along with the crab meat, spring onions and parsley, mix
to combine. Season to taste.
Halve the avocado pears lengthways and remove the stones. Place each avocado
half on a serving plate, brushing the cut surface with a little lemon juice.
Pile the crab mixture into the avocado halves. Garnish with a sprinkling of
paprika and serve.
