Cullen's Avocado Lime Pie
1 x avocado
1 can sweetened condensed (14 oz)
milk
1 tsp grated lime zest
1/2 cup lime juice
2 x egg yolks
ds salt
1 x 9 inch baked pie shell
mint leaves optional
Method :
Peel avocado, remove pit and force pulp through sieve to make 1 cup.
Combine condensed milk, lime zest and juice, lightly beaten egg yolks and salt,
Stir until mizture thickens. Fold in avocado, then turn into pastry shell. Chill
several hours. Garnish with mint leaves.
