Cullen's
Guacamole Salad
2 fresh hot green chiles
3 sprigs fresh cilantro, leaves only
2 tablespoons finely-chopped onion
1/2 teaspoon salt, or to taste
1 large tomato, peeled and roughly chopped
2 ripe avocados
Crush chiles, cilantro, onion and salt to a paste. Add tomato and blend
together. Peel and pit avocados, then mash. Add to tomato mixture and blend well
If you have to refrigerate guacamole, cover it with cling film or plastic
wrap, placing the wrap directly on the surface or place the pits in the salad.
Contact with air will tend to discolor darken the guacamole.
Guacamole can range from hot to very mild. Obviously, the heat depends upon the
quantity of jalapenos used. And some chilies are hotter than others, so
experiment to determine your favorite proportion of ingredients
