James's Pork Tenderloin Avocado Melt
1 x pork tenderloin (approximately 1 lb)
3 tbl cornstarch
2 tsp chili powder
2 tsp garlic powder
Salt and pepper
1 x egg beaten with 1 tbsp water
1/2 cup cornmeal
3 tbl olive oil
1 x avocado peeled and sliced
1 1/2 cup shredded cheddar cheese
Method :
Cut pork into 4 - 5 pieces and flatten to 1/4 inch. Season with chili powder,
garlic powder, salt and pepper. Dredge in cornstarch, then egg mixture, then in
cornmeal. Heat oil over medium heat and brown pork lightly on both sides. Place
pork in a shallow baking dish and top with avocado slices and cheese. Bake at
350 for 15 minutes or until done and the cheese has melted.
