Lynn's Fettuccine Avocados Walnuts
2 tbl Olive oil
1/4 cup Tarragon vinegar
1/4 cup Basil, fresh
2 tbl Green onion, minced
1/4 cup Bell pepper
1/2 cup Tomatoes, sun-dried
2 tbl Walnuts, chopped
1 x Avocado, pitted, peeled, diced
1 lb Fettuccine
Method :
In large bowl, combine olive oil, vinegar, basil, green onions, bell pepper,
sun-dried tomatoes, walnuts, and half of diced avocado. Toss ingredients so they
are evenly coated with oil & vinegar.
Cook pasta in boiling water until al dente. Drain pasta, turn it into salad
bowl, mix with vegetables. Garnish with remaining avocado. Sprinkle with grated
Parmesan cheese and serve.
