Lynn's Warm Avocado Salad
1 head romaine lettuce, chopped
1 tsp Mustard powder
1 tbl White wine vinegar
1 tbl Olive oil
2 tsp Chopped fresh basil
Salt and black pepper to taste
4 x Scallions, trimmed and chopped
4 x Ribs celery, diced
1 med Green pepper, seeded and diced
1/2 x Avocado, peeled and diced
1/2 x Cucumber, peeled and diced
Method :
Tear lettuce and place in large bowl. Mix together mustard, vinegar, olive oil,
basil, salt and pepper. In skillet with hot oil, saute scallions, celery and
green pepper. Add avocado and cucumber to skillet. Add vinaigrette to skillet.
Pour skillet mixture over lettuce in bowl. Toss.
Serve warm.
