Lynn's Avocado Bean Bacon Salad

 

1 x Red onion, cut into slices
3 tbl Olive oil
3 tbl Balsamic vinegar
300 gm Extra fine green beans, (10z)
1 x Avocado
    Salt and freshly ground black pepper
25 gm Cooked bacon slices, (1oz)
25 gm Parmesan cheese, shaved (1oz)

 Method :
Preheat the oven to 150 C, 300 F, Gas Mark 2.
Put the onion on a baking tray, drizzle over the oil and balsamic vinegar and cook for 40 minutes.
Meanwhile cook the beans according to pack instructions.
Cut the avocado into chunks, mix with the cooked beans and onions and season well.
Pile the salad onto the plates, lay the bacon slices on the top and sprinkle over the shaved parmesan.
