James's Avocado Bean Sprouts Olives Salad
4 x Just-ripe avocados
250 gm Stuffed olives, sliced
500 gm Bean shoots
3 tbl Finely sliced spring onions
Your favourite vinaigrette
Salt and freshly ground pepper
Method :
Peel and slice avocados and place in a salad bowl. Add stuffed olives, bean
shoots and sping onions. Toss with your favourite vinaigrette and salt and
pepper well. Serve at once with chicken or as a first course.
