Cullen's Berry Avocado Salad
3 tbl (45 ml) extra-virgin olive oil
1 tbl (15 ml) raspberry or balsamic vinegar
1/4 tsp (1 ml) cinnamon
A dash of hot sauce
Salt and freshly ground pepper to taste
1 cup (250 ml) strawberries, raspberries etc, hulled and quartered
1/4 cup (60 ml) chopped red onion
1 x ripe avocado, halved and pitted
Lettuce leaves for garnish
Method :
Whisk together the oil, vinegar, cinnamon, hot sauce, salt, and pepper. Toss
with the strawberries and onion. Spoon the strawberry mixture onto the avocado
halves and serve on a bed of lettuce.
