James's Bacon Avocado Salad

 

250 gm Unsmoked streaky bacon, derinded (8oz)
    Selection of mixed salad leaves
125 gm Cherry tomatoes, halved (4oz)
1 x Ripe avocado, peeled and sliced
12 x Pitted black olives, halved
1 x Yellow pepper, de-seeded and diced
1 tbl Olive oil
1 x Clove garlic, crushed
2 slc Bread, cubed
4 tbl Balsamic vinaigrette dressing

 Method :
1. Grill the bacon until crisp and cut into cubes.
2. Meanwhile arrange the salad leaves, tomatoes, avocado slices, olives and diced pepper on a serving plate.
3. Heat the oil in a frying pan, add the garlic and bread cubes and cook for 2-3 minutes until golden on both sides. Drain well on kitchen paper.
4. Sprinkle the bacon and croutons over the salad and drizzle over the vinaigrette just before serving
