Cullen's Avocado Cilantro Lime Salsa Salad
2 tbl minced red onion
2/3 cup minced cilantro
1/4 cup minced parsley
2 tbl olive oil
3 tbl lime juice
1 1/2 tbl white wine vinegar
2 x garlic cloves minced
1 x jalapeno pepper minced
1 lrg avocado cut 18 thin slices
1 med orange sectioned
1 sm red onion sliced into rings
Method :
Combine the onion, cilantro, parsley, oil, lime juice, vinegar, garlic and
jalapeno pepper in a small bowl. Cover and refrigerate for 1 hour.
On individual plates, fan out the avocado slices and top with oranges and red
onions. Spoon salsa on top and serve.
This recipe yields 6 servings.
Serving size: 3 slices avocado, 1 tablespoon salsa.
