Shanna's Potato Avocado Orange Salad

 

fresh spinach leaves washed and dried
5 x tiny red potatoes (5-6) cooked and cooled
1 bn radishes trimmed & thin slice
2 tbl balsamic vinegar
6 tbl extra-virgin olive oil
1 1/2 tsp sugar
1 1/2 tsp zest of a fresh orange
2 x oranges peeled and sliced
1 x avocadoes (1 to 2) peeled and sliced

 Method :
Combine spinach, potatoes, and radishes in large bowl. Whisk vinegar and oil in small glass measuring cup, adding sugar and orange zest. Season with salt and pepper and pour over the salad and gently toss. Mound salad on large platter and top with orange and avocado slices.
