Cullen's Avocado Spinach Bacon Papaya Salad
1 lrg bag young leaf spinach washed
4 x thsp extra virgin olive oil
1 tbl lime juice (approx 1 lime)
1 tbl orange juice (approx 1/2 orange)
200 gm back bacon rashers
1 lrg papaya (pawpaw)
1 lrg ripe avocado
Method :
Place the spinach in a large salad bowl.
Prepare the dressing by shaking together the oil with the lime and orar ge
juices then season to taste with salt and pepper.
Grill the bacon until crispy.
Meanwhile halve the papaya scoop out and discard the seeds then dice the flesh.
Halve stone and peel the avocado and cut into dice.
Add the papaya and avocado dice to the spinach.
Once the bacon is cooked snip it into bite size pieces and add to the salad.
Pour over the dressing and gently toss everything together.
Serve at once.
Do not use bottled lime or orange juice.
Serves 4
