Lynn's Pasta Bacon Salad

 

2 cup MAGGI Pasta crests
4 x bacon rashers, cooked and cut into strips
1 x avocado, diced
12 x cherry tomatoes, halved (12 to 16)
2 tbl capers, (optional)
1 x spring onion, sliced
1/4 cup grated or shaved parmesan
2 tbl parsley sprigs
1/4 cup oil, preferably olive oil
2 tbl lemon juice or wine vinegar
1 tsp French mustard
1/2 tsp MAGGI green herb stock powder
1 tbl honey
    freshly ground black pepper

 Method :
Add the pasta to a large quantity of boiling water and cook for 8 1/2 minutes or until just tender. Drain. Rinse under cold running water, then drain thoroughly.
Place the pasta in a bowl with the remaining salad ingredients.
Prepare the dressing. Combine all the ingredients in a bowl and whisk until smooth.
Just before serving, toss the salad with the dressing. Serve immediately.
