James's Avocado Papaya Chicken Salad Passion Fruit Dressing
6 x Halves poached boneless
Chicken breasts
2 x Peeled & thinly sliced ripe
Papayas
2 x Peeled & thinly sliced ripe
Avocados
4 tbl Fresh lime juice
Pulp of 1 ripe passionfruit
1/2 cup Vegetable oil
Finely grated peel of 1
Lime
Salt & pepper
2 x 3 Tbls. honey
1/2 cup Coarsely chopped pecans
Method :
Line 6 salad plates with lettuce. Trim any fat remaining on chicken.
Cut chicken into bite sized pieces. Alternate chicken, avocado & papaya on
plates. Whisk together lime juice, pulp, oil, peel, salt & pepper &
honey. Spoon dressing over each salad. Sprinkle with pecans.
Serve immediately.
