Cullen's Jicama Avocado Salsa

 

1 lrg Jicama, peeled and diced
2 x ripe avocadoes, peeled, pitted and diced
1/4 cup fresh cilantro, chopped
1/4 cup red onion, diced
1 x jalapeno chile, finely diced
    Juice of 1 lime
2 tbl olive oil

 Method :
Combine all ingredients in a bowl and gently stir. Chill until ready to serve. Serve with tortilla chips. Jicama is a sweet, crunchy tropical fruit. If you cannot find jicama, you may use diced water chestnuts instead.
