James's Papaya Avocado Pepper Salsa

 

2 tbl Fresh lemon juice
1/2 tsp Salt
1/4 tsp Cumin
1/2 cup Sweet onion, small cubed
1/2 cup Yellow pepper, small cubed
1/2 cup Papaya, small cubed
1/2 cup Avocado, small cubed
2 tbl Chopped cilantro

 Method :
Mix first three ingredients in a large bowl. Cube the vegetables and fruits in small cubes. Twist and chop the cilantro. Add remaining ingredients to lemon, salt and cumin mixture. Mix entire recipe. Serve over fish and chicken or with low-fat chips.
Yield: 2 cups, 4- 1/3 cup servings
Vitamin A found in papaya and avocado.
