James's El Pollo Loco Avocado Salsa
1 x ripe avocado
1 x jalapeno, stemmed and quartered
1 cup water
1 tbl white distilled vinegar
3/4 tsp salt
2 tbl minced fresh cilantro
2 tbl diced onion
Method :
1. Combine avocado, jalapeno, water, vinegar and salt in a food processor.
Puree the mixture for several seconds on high speed, or until jalapeno is finely
minced.
2. Pour mixture into a medium bowl. Stir in cilantro and onion. Cover and chill
until ready to serve.
Makes 1 1/2 cups.
