Lynn's Roasted Tomatillos Avocado Salsa
1 tbl Vegetable oil
3/4 lb Tomatillos, roasted & peeled
2 x Garlic cloves, minced or 2 tsp. gra
2 tbl Lime juice
1 tsp Salt
1 tsp White pepper
2 x Avocados, peeled
Method :
Saute onion in oil. Cut tomatillos in half and add to onion, lime juice and
seasonings. Cook 2 minutes, then set aside to cool. Peel and put avocados.
Add tomatillos with onion mixture to food processor. Puree until smooth.
Allow sauce to stand 1 hour before serving.
