Cullen's Potato Tomato Avocado Salsa
1 x white or red rose or other boiling potato quartered
2 x ripe firm avocados
4 x plum tomatoes seeded, diced
1 x white onion chopped
3 x serrano peppers - (to 6) stemmed, chopped
1/4 cup chopped cilantro leaves
1 tsp coarse salt
Freshly-ground black pepper 6 grinds
Juice of 1 lime
Method :
Boil potato in small saucepan until tender, about 15 minutes. Drain and cool
potato, then peel and cut into 1/4-inch dice. Place in medium bowl.
Peel and dice avocados into 1/4-inch dice and add to bowl. Add tomatoes, onion,
peppers, cilantro, salt, pepper and lime juice and mix gently. Taste and adjust
seasoning.
Serve at room temperature or slightly cool.
This recipe yields 4 cups.
