James's Avocado Prawn Mango Salad
1 x avocados
1 x mangoes
16 x prawns, cooked
100 gm lettuce, mixed
1 tbl chives, chopped
DRESSING:
2 tbl mayonnaise
2 tbl French dressing
2 tbl lemon juice
2 tbl yoghurt, natural
1 tsp chilli paste
Method :
Dressing:
Combine all ingredients in a bowl and mix well.
Halve avocado, peel and slice. Peel and slice mango. Shell and devein prawns.
Arrange lettuce on serving plate, top with sliced fruits and prawns in a
decorative fashion. Drizzle lemon/chilli dressing over and sprinkle with chopped
chives.
