Lynn's Shrimp Avocado French Tomato Dressing
1/4 cup vegetable oil
1/8 cup ketchup
1 tbl white wine vinegar
1 tbl fresh lemon juice
1/3 tsp Worcestershire sauce
1/2 tsp sugar
1/4 tsp dry mustard
pepper, to taste
Shrimp and Avocado Salad
2 x ripe avocado
2 x tomato, seeded, and, chopped
1/2 lb shrimp, peeled, and, deveined
1/2 cup finely chopped English cucumber
1/4 cup fresh chopped parsley
1 tbl chopped mint
leaf lettuce
watercress
Method :
Combine all ingredients and mix well.
Shrimp and Avocado Salad:
Halve and pit avocados. Scoop out pulp, dice and place in large bowl with
tomatoes, cucumber, parsley and mint.
Grill shrimp until cooked through. Add shrimp to avocado mixture.
Pour salad dressing over avocado mixture on place on platter lined with lettuces
or fill avocado shells.
