Kat's Chilled Avocado Wine Milk Soup
1 tbl olive oil
1 1/2 x white onions, finely chopped
4 med ripe avocados, peel & pitted
1 tbl lime juice
1/2 cup dry white wine
3 cup chicken broth
1 1/4 tsp ground white pepper
1 cup nonfat or low-fat milk
1/4 tsp cayenne
1 tbl fresh cilantro, chopped
GARNISH
fresh chives, Chopped
Method :
Heat the olive oil and saute the onions until limp. Place the avocados in a
blender, add lime juice, wine, and sauteed onions, and puree. Place the rest of
the ingredients (except the chives) in a bowl, stir in the avocado puree, and
chill in the refrigerator for at least 2 hours before serving.
Ladle into individual bowls, sprinkle with a little chopped fresh chives, and
serve.
