Shanna's Cold Avocado Corn Soup
1 x Pared small cucumber seeded
And chopped
1 can (7-oz) corn kernels drained
1 x Chopped tomato
1 x Seeded and minced jalapeno
Pepper
2 tbl Chopped cilantro
1/8 tsp Ground cumin
2 tbl Lemon juice
2 x Avocados (1-lb) pared
Halved and pitted
1 1/2 cup Milk
1 cup Chicken broth
Method :
In 6 cup serving bowl place first 7 ingredients. In food processor, rpocess
avocados, milk and broth until smooth. Pour into bowl. Press plastic wrap
against top of soup; chill at least 2 hours. Soup will discolor upon exposure to
air.
