Cullen's Avocado Crab Soup

 

4 x avocados, peeled & seeded
1 x (8 oz.) can of crabmeat
1 x onion, chopped very finely
4 tbl butter
1 tbl all purpose flour
1/2 tsp garlic powder
4 cup chicken stock
2 cup heavy cream
    Salt & pepper to taste

 Method :
Mash avocados and crabmeat. Saute onion in butter.
Add flour, garlic powder, and chicken stock. Whip until smooth. Add avocado and crab mixture to the liquid. Simmer for 20 minutes. Add cream and season to taste. Serve either hot or very cold.
NOTE: Light
cream may be substituted for heavy cream.
