Beef Tips Creole
3 lbs beef sirloin tips in 1" cubes
3 tbs oil
1/2 cup chopped onion
1/4 cup chopped bell pepper
1/4 cup chopped celery
Salt & pepper
1 tsp parsley
2 tsp gumbo file
1/2 tsp each basil and oregano
1/2 tsp each garlic powder and chili powder
Dash nutmeg
1 16 oz can tomatoes
1 cup water
Sauté beef in oil until it becomes a rich brown. Add onions, celery and
bell peppers.
Cook over medium heat for 20 mins; stir. Add seasonings; cook 15 mins more over
low heat. Add tomatoes and water and simmer 1 hour or until meat is tender.
