Kat's Creole Grillades

 

2 lb Beef round, thinly sliced 
6 tbs Salad oil 
1/4 c Flour 1 Onion, medium, chopped 
1 c Tomatoes, peeled cubed 
1 1/2 c Water 
1 Bell pepper, green, chopped 
1 Garlic clove, chopped 
1 Bay leaf 
1 tbs Parsley, chopped 
2 tesp Salt 
1 tesp Tabasco sauce 
1/2 tesp Thyme 
3 c Rice, hot cooked 3 c 
Hominy grits, hot cooked 

In deep skillet, brown meat in drippings; remove meat. Add flour and brown, stirring constantly. Add onion and tomatoes; simmer a few minutes. Add meat, water, bell pepper, garlic, bay leaf, parsley, salt, Tabasco and thyme; cover and simmer 1 1/2 hours, or until meat is very tender (add water, if necessary, to make sauce the consistency of thick gravy).

Serve with grits

When a girl gets her first period in Sri Lanka, the exact time and day are noted. An astrologer is consulted who predicts many things about the girl's future based on the time and the alignment of the stars. The family then prepares their house for a ritual bathing, in which the women of the family wash the girl's hair and scrub her all over. She then puts on new white clothes from her underwear to her shoes. Printed invitations are sent for a party where gifts and money are presented to the girl.
