Granny's Sir Lanka Whole Chicken
Two whole chickens
1 cup plain yogurt
10 cloves garlic, slightly crushed
3 medium onions, sliced in half moons
5 Tbsp. Worcestershire sauce
6 cloves
3 cardamom seeds, crushed
4 Tbsp. garam masala
5 Tbsp. ground coriander
1 Tbsp. turmeric powder
good sprinkling of paprika
5 medium red potatoes, peeled and diced into one-inch pieces
1/4 cup olive oil
Salt to taste
Preheat over to 375 degrees. Take skin and fat off of chicken and poke
lots of holes in chickens with fork. In a bowl, place chickens and the rest of
the ingredients. Massage spices into chicken, potatoes, onions and garlic. Let
marinate for at least 30 minutes. Place everything into a pan and bake for an
hour and a half. Check at an hour and add a little water if vegetables at bottom
of pan need it. Carrots are also a nice addition.
