Shanna's Baked Halibut Jalapeno Grapefruit Vinaigrette

 

FOR THE VINAIGRETTE
1 x lemon, seed and quarter
1/2 cup pink grapefruit juice
1 tbl olive oil
3 x green onions, white portion only,
    sliced
1 x jalapeno, quartered
1 tbl chopped cilantro
1/4 tsp salt
1/4 tsp freshly ground black pepper
FOR THE HALIBUT
4 x halibut steaks (approx. 5-6 oz. each), 1/2" thick
1/4 cup dry white wine
1/2 cup chicken broth
4 x green onions, white portion only,
    sliced
1 tbl crushed fresh thyme, OR
1 tsp crushed dried thyme
1/4 tsp freshly ground black pepper
1/2 tsp ground New Mexico red chile powder

 Method :
To prepare the vinaigrette:
Place the lemon in a food processor fitted with a steel blade and chop.
Add the rest of the ingredients and blend. Preheat oven to 400 degrees.
Place the halibut steaks in a baking dish and pour the wine and chicken broth over the fish. Top with the sliced onions and thyme. Sprinkle with black pepper and chile powder and bake in a 400-degree oven, uncovered, 10 to 12 minutes or until the fish flakes easily when tested with a fork.
Carefully lift the fish out of the pan and onto serving plates. Serve with the jalapeno grapefruit vinaigrette.
SERVING SUGGESTIONS: Makes a nice meal with mixed brown, white, or wild rice or a warm pasta salad. You can also serve the jalapeno grapefruit vinaigrette with broiled chicken.
