Lynn's Corn Beef & Cabbage Casserole



2 c. shredded cabbage, cooked
1/2 c. shredded cheese
1 lb. corned beef, cooked
2 tbsp. butter
2 tbsp. flour
1/2 c. corned beef stock
1 c. milk
In a greased casserole, layer cabbage, cheese, and corned beef. Prepare cream sauce with butter, flour, milk, and stock. Pour over cabbage and corned beef. Top with more shredded cheese. Bake in a 350 degree oven for 30 minutes. Serves 4.

After climbing a great hill, one only finds that there are many more hills to climb. I have taken a moment here to rest, to steal a view of the glorious vista that surrounds me, to look back on the distance I have come. But I can rest only for a moment, for with freedom comes responsibilities, and I dare not linger, for my long walk is not yet ended.
