Beef Casseroles
Lynn's Sliced Corn Beef Cheese Bread Casserole
1 large onion
1 small head cabbage
2 Tblsp. salad oil
1/4 tsp. salt
1/2 cup water
1/3 cup mayonnaise
1/3 cup chili sauce
1/4 cup milk
1 Tblsp. sweet pickle relish
1/2 pound thin sliced deli corned beef
1/4 pound thin sliced Swiss cheese
1/2 (8 oz.) loaf party pumpernickel bread slices
Cut onion into thick slices. Cut cabbage into thin wedges. In a large skillet,
heat oil and add onions; cook until tender.
Remove onions. Add cabbage wedges and brown. Add salt & water. Over high
heat, heat to boiling. Cover & reduce heat to low. Simmer 10 minutes until
cabbage is tender.
In small bowl, combine mayonnaise, chili sauce, milk and relish. Stir until well
blended.
In a 9 x 13 inch dish, arrange onions, cooked cabbage, corned beef and cheese.
Top with slices of bread. Spread mayonnaise mixture evenly on top of bread
slices. Cover & bake at 375 degrees for 20 to 25 minutes.
