James's Beef Rib Crock Pot Casserole

 

2 lbs. beef short ribs
8-oz lima beans
8 oz dry barley
1 c. carrots, peel & coarsely chop (or 1 c. baby carrots)
1 small onion, diced
1 cup diced red potatoes (optional)
salt
pepper
garlic powder
paprika

Put beans, barley, carrots and onion in casserole dish.
Season *generously* with salt, pepper, garlic powder and paprika.
Place beef short ribs on top and season with same. Pour enough water over it all to cover completely.
Cook in 225° oven overnight (8-10 hours).
For crock pot; place all ingredients in crock in same order as above.
Cook on LOW for 10-12 hours.
Makes 6-8 servings
