James's Beef Tongue Casserole

 

1 x Beef tongue
    Water (enough to boil them)
1 stalk Celery
1 x Leek
1 x Laurel leaf
    Salt
1 x Carrot
1 x Onion
4 x Peppercorns
2 tbl Butter or margarine
1 sm Onion, diced
1 cup Tongue boiling liquid
2 tbl Flour
1 x Garlic, finely minced
1 1/8 sm Can Mushrooms
1 x Juice of 1 Lemon
1 x salt and pepper
1/2 cup Sour cream
1/2 can Tomatos peeled

 Method :
Boil tongue in water, clery, leek, laurel leaf, salt carrot, onion, and peppercorns, until pierced skin can be removed. About 3 hours after the tongue is cool enough to handle. peel and cut into 1" cubes. Reserve and garlic in butter, till limp.
Add flour and cook for 2 minutes. Add broth and bring to a boil. reduce heat, add mushrooms, tomatoes, lemonn juice, salt and pepper.Add the tongue cubes anbd let heat through.
Add sour cream and take off heat.
