Granny's Tenderloin Shiitake Mushrooms Red Wine

 

1/2 cup flour
4 piece beef, tenderloin
2 tbl canola oil
1 cup pearl onion, chopped
2 clv garlic, chopped
2 x celery, stalks, chopped
2 cup shiitake mushroom, chopped
2 tbl fresh thyme, chopped
1 x bay leaf
1/2 tsp black pepper
1/2 cup beef stock
1 1/2 cup red wine
1 tbl Worcestershire sauce
1 tbl balsamic vinegar

 Method :
Preheat oven to 350 degrees Fahrenheit.
Roll tenderloin in flour. Sear all sides in a hot grill pan, then remove to an ovenproof dish. Place in a 350-degree oven for 15 to 20 minutes.
In a pan, saute the onion, garlic and celery for about 2 minutes. Add the mushrooms and continue to saute for about 4 to 5 minutes. Add all of the remaining ingredients and bring to a boil.
Reduce heat, cover and simmer about 20 minutes. Remove bay leaf and serve over sliced beef tenderloin. Serve with goat cheese mashed potatoes or blue cheese polenta.
