Sweet and Sour Green Beans

 

1  pd green beans (4 cups), trimmed
4  oz bacon, chopped
3  tb brown sugar
3  tbs parsley
1  tesp finely chopped shallot or onion
2  tesp red wine vinegar

Cook green beans in boiling water for 15 to 20 minutes or until crisp-tender.
 Drain off water and set aside.

 In a large skillet, cook bacon until crisp. Drain, reserving 4 teaspoons drippings.
Return bacon and the reserved drippings to skillet. .

Add brown sugar, parsley, vinegar and shallot. Bring to boiling; reduce heat and simmer,
uncovered, for 2 minutes. Add green beans and heat through.
