White Beans

1 lb. great northern white beans
3-4 bacon strips
1/4 cup each chopped onions, bell peppers, and celery
salt and pepper
1/4 cup cooking oil
Let beans soak overnight in the refrigerator.
Put all ingredients in slow cooker/Crock Pot and cook on low about 4 hours.
If the beans are cooked but the "gravy" is too thin, you may have to
boil the beans on the stove until it is thicker. Serve over rice
Once we accept our limits, we go beyond them.
