Eyed with Hog Jowl

2 pounds dried black-eyed peas
1/2 pound hog jowl or ham hock
3 pints water
1 large onion
1 tsp garlic powder
1 small red pepper pod
Pepper & salt, to taste
Put all in pan, cover with enough water to be 2 inches over beans. Cover and bring to a boil, boil 5 mins. Cut off heat and let stand 1 hr.
Cover tightly and simmer slowly 2 hours or until peas are tender add water as
needed.
