Granny's Sausage Black eyed

 

1/4 lb bacon, diced
·
  1 lb. andouille sausage, cut into 1/4 inch slices
·
  1/2 lb. ham, diced
·
  1 cup onion, chopped
·
  1/2 cup green bell pepper, chopped
·
  1or 2  jalapeno pepper, chopped
·
  1-15 oz. can black-eyed peas
·
  salt and pepper to taste

Method:
In a heavy saucepan, brown the bacon. Add the sausage and ham and brown. Add the onion, bell pepper and jalapeno, cook until the pepper begins to soften, about 5 minutes. Season with salt and pepper, pour in the can of black-eyed peas and simmer over low heat for about 30 minutes
