      Kat's Beef and Noodles

 

1 1/4 pds boneless bottom roast cut into 3/4 cubes
1/2 cup chopped onion
1 tbs cooking oil
1/2 tsp dried basil
salt & pepper
2 cloves garlic
3 cups beef broth
2 tbs vinegar
1/4 cup beef broth
4 oz medium noodles
3 tbs all purpose flour

In a sauce pan brown half in hot oil, remove from pan, brown other half with the onion and garlic
Add more oil if needed. Return all meat and veggies to pan, stir in 3 cups beef broth, vinegar,
basil salt and pepper bring to a boil, reduce heat, cover and simmer for1 1/4 to 11/2 hours,
till meat is tender. Stir noodles into pan, bring to a boil reduce heat, cook uncovered about 8 min
Drain meat and noodles reserving 21/2 cups of the broth. Return the broth back to the pan.
Combine the 1/4 cup beef broth and stir into the pan. Cook until thick, return beef and
noodles cook 1 min serve over scoop mashed potatoes

2 small onions chopped
1 bell pepper chopped
1 clove garlic minced
Butter
Salt & pepper
2 lbs ground beef
Chili powder
1 pkg egg noodles
1 lb grated sharp Cheddar cheese
1 can corn or hominy
18-20 jumbo black olives
Button Mushrooms

Sauté onions, peppers and garlic in butter. Slowly fry ground beef until done. Season to taste,
pour off any fat. Cook noodles in salt water until tender. Drain noodles and put in a pre heated
3 qt casserole that has been lightly greased. Add onions, beef and all other ingredients.
Bake @ 275 for 1 hour.
