              Shanna's Olive's Soft Polenta

 

4 cups water
1  cup yellow corn meal
1 tsp  salt
2 tbs unsalted butter
1/8 tesp black pepper
1/2 cup grated Parmesan cheese
1 bay leaf

In a medium bowel combine the cornmeal with 1 cup water. Mix
until blended. In a heavy pan bring 3 cups water, salt and bay leaf to a boil. Stir in cornmeal
paste to water and bring to a boil stirring constantly with wooden spoon. Reduce the heat to low, stirring occasionally,
until thick 10-12 min. Remove the bay leaf add butter and incorporate. Cover to keep warm and serve
