    James Zuni Indian Bread

 

1 pkg dry yeast
1/4 cup warm water
1/4 cup shortening
1/2 cup molasses
2 tsp salt
2 cups cornmeal
13/4 cup hot water
41/2 to 5 cups flour
Butter

Dissolve yeast in warm water. Measure shortening, molasses, salt and cornmeal and put into a bowl. Add hot water and blend. Stir in 2 cups flour to make batter thick. Beat until elastic 100 strokes. add yeast and sift in another 21/2 cups flour. Work in additional flour by hand to dough that does not stick to your fingers.
Turn on flour board and knead 2 min. Sshape into a ball and put into greased bowl. Cover surface with butter lightly cover with towel and let rise in warm place 85F until double in size about 11/2 hours. Punch down and shape into a round loaf about 2 inches thick. Place on greased baking sheet and let rise again about 1 hour. Prick full of holes with ice pick. Bake @ 400 35 to 40 min.
