Kat's Crawfish Polenta
1/2 lb. chopped crawfish
1 cup yellow cornmeal
4 cups boiling water
1/2 lb. butter
1/2 cup heavy cream
salt and pepper to taste
Combine water and cornmeal. Cook for approximately 15 minutes.
Add butter, cream, salt and pepper. Cook for approximately 10 minutes.
Add crawfish. Remove and place in a 9" cake pan. Refrigerate until formed.
When in doubt, mumble; when in trouble, delegate; when in charge,
ponder.
