Granny's Pineapple Puff with Almonds
2 cups diced fresh pineapple
1 stick unsalted butter or margarine
8 eggs
1 3/4 cups milk (I use 2%)
1 cup all purpose flour
3 TB sugar
½ tsp salt
¾ tsp almond extract
4 TB brown sugar (or to taste)
¼ tsp each, cinnamon and nutmeg
½ cup slivered almonds

Directions:
1. Spray two pie plates with Pam.
2. In blender , mix eggs, milk, flour, sugar, salt and almond extract until
smooth.
3. Mix brown sugar with cinnamon and nutmeg. Set aside.
4. Set oven to 350 degrees. Divide butter between two pie plates or quiche
dishes. Place in oven until butter melts.
5. Add diced pineapple to pie plate and return to oven until butter sizzles.
6. Once again, remove from oven. Pour egg mixture over pineapple and sprinkle
spiced brown sugar over top. Distribute slivered almonds evenly over top.
7. Return to oven and bake until puffed and golden, about 30 minutes. Puff will
rise up into a bowl shape.
Variations:
Sprinkle finely chopped crystallized ginger over hot pineapple before egg
mixture is added to pie plates.
Substitute chopped macadamia nuts for the almonds and replace almond extract
with vanilla.
To select
well among old things is almost equal to inventing new ones.
