Mexican Strata
Nonstick spray coating
5 slices white or whole wheat bread,
cubed (3¾ cups)
3 eggs
1 cup skim milk
½ cup plain low-fat yogurt
½ cup shredded Monterey Jack cheese
with jalapeño (2 ounces)
1/3 cup shredded sharp cheddar cheese
¾ cup salsa
Parsley sprigs (optional)
Spray an 8x1½-inch round baking dish with nonstick spray coating. Spread
bread cubes evenly in the baking dish. Set baking dish aside.
In medium mixing bowl beat together eggs, skim milk, and yogurt. Stir in
Monterey Jack and cheddar cheese. Pour egg mixture over bread cubes in baking
dish. Cover and chill for 2 to 24 hours.
Before serving, uncover baking dish. Bake in a 325° oven for 35 to 40 minutes
or till center is set and top is golden. Let stand for 5 to 10 minutes before
cutting. Meanwhile, heat salsa. If desired, spoon some of the salsa on top of
the strata; garnish with parsley. Cut into wedges to serve. Pass remaining
salsa.
