James's Short Ribs With Dried Fruit

 

3 pounds beef short ribs
salt, pepper, and flour
2 tablespoons oil or drippings 
1 cup water
1/2 cup pitted prunes
1/2 cup dried apricots 
2 tablespoons sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground allspice
3 tablespoons vinegar
PREPARATION:

Season meat with salt and pepper then dredge in flour to coat all sides. Brown on all sides in hot oil in a heavy skillet or Dutch oven. Remove meat and pour off fat. Put meat back in the pot. Add water and bring to a boil. 
Reduce heat, cover, and simmer for 1 1/2 hours. Add dried fruits and remaining ingredients. Simmer, adding more water if necessary, for 1 hour longer.
Serves 4.
