1 medium onion chopped
1 tbs olive oil
2 cloves garlic, minced
13/4 lb chicken breasts, cut into bites
1 141/2 oz chicken broth
1/2 tsp poultry seasoning
Salt & pepper
2 serrano or jalapeno peppers chopped
3/4 cup uncooked rice or yellow rice
1 15 oz can black-eyed peas or black beans or pinto beans
2 tbs chopped cilantro
In a large skillet, heat oil over medium heat. Add onion and cook until
tender.
Add garlic and chicken and cook, stirring frequently, until chicken browns 7-8
mins.
Stir in broth, poultry seasoning, peppers, salt and pepper. Raise heat to high
and
bring mixture to a boil. Mix in rice and reduce heat to low, cover and cook
until rice is
tender about 10-12 mins. Stir in beans or peas and thyme mixing well.
Cover and cook until warm.
