1 qt veg. oil divided
1/4 cup grapefruit juice
1/4 cup tequila
2 cloves garlic minced
1 tsp oregano
Salt & pepper
11/2 boneless, skinless, chicken breasts cut into 1 inch cubes
1/4 cup yellow corn meal
1/4 cup flour
1/2 tbs paprika
In a large bowl combine 1/4 cup of oil, grapefruit juice, tequila,
garlic, oregano, salt and pepper and blend. Add chicken and coat and
refrigerate 2 hours. In a plastic bag add cornmeal, flour and paprika.
Drain chicken and place 6 pieces at a time in plastic bag and
shake coating chicken. Put remaining oil in skillet over medium high
heat. Carefully add chicken 6 pieces at a time. Fry 2-3 min. or is
cooked
